To express their carefree and laid-back attitude, many in the Caribbean say they're “liming” or suggest “let’s go lime.” Those of us in the USA say the exact same thing when we’re “chilling and grilling.” The vibes the same. And nothing evokes more of that beach vibe that the scent of fresh lime. That’s just one reason Air Scense uses lime as one of the inspirations for our home sprays - to keep your sense of smell satisfied. But we decided to kick it up a notch and uncovered three ways to tickle your taste buds with this zesty little fruit.

No doubt you have been grilling and chilling this summer. Bored yet with the same old? Maybe it’s time to give a new, tangy and refreshing marinade a whirl. We took the trial and error out of the process and concocted one “liming” marinade sure to please the crowds. Our taste tests used chicken, but we’re sure you could pair this recipe with steak, fish and even veggies! Here’s the lowdown…

Now standing over the grill has probably left you feeling pretty parched. Can we interest you in a glass of something cool, refreshing and lime? Since we’ve already offered you a healthy, hydrating lime infused option in our “Enthused to Infused” blog post – we thought we would search the other end of the spectrum and look for a limey-libation! You would never believe how many drinks there are (and don’t worry – we didn’t sample them all) that are made with lime flavor. Many more just use them as a garnish!

Guess that speaks to just how naturally refreshing limes are! Margaritas, daiquiris and more – oh my! We narrowed our focus group down to just mojitos – and after finding the cutest mojitos glasses to serve them in got busy stirring up several tasty samples. Glasses were filled, taste-buds delighted and we came up with 3 options for you! Here’s how to make your move with lime…

Should we even bother asking if you’ve saved room dessert? Of course you have. And what’s the most lime-focused dessert ever….Key Lime Pie naturally! Sure, there’s lots of recipes to choose from but we wanted the best. So we loosened our belts (and pulled out those stretchy pants!) to allow for more, ahem, sampling. We’re sure you understand. After spending an afternoon nibbling, we nailed a recipe that will be your go-to pie recipe.

And as a quick note: key limes are a little harder to come by than your standard limes, but they are worth the extra effort because of their added flavor.

Our Favorite Key Lime Pie

Ingredients
3 egg yolks
2 tsp lime zest
1 can sweetened condensed milk
⅔ cup fresh key lime juice
For crust:
1-1/2 cup graham cracker crumbs
3 tbsp sugar
⅓ cup butter, melted

Instructions

1. To make crust, brown butter over medium heat for 20 minutes (stirring frequently) until it gets speckled. Add to graham cracker crumbs and sugar and blend well. Press firmly to bottom and sides of pie plate (or individual tins.)
2. Preheat oven to 350.
3. In mixer, beat egg yolks and lime zest on high speed until very fluffy (about 5 minutes).
4. Gradually add the condensed milk and continue to beat 3-4 minutes longer. Lower speed and gradually add the lime juice until it is completely blended.
5. Pour into crust and bake 10 minutes. Let cool and then refrigerate until completely chilled. Decorate with fresh whipped cream and lime slices!

Our Favorite Lime Cilantro Marinade

Ingredients
2 limes, juice and zest or 1/4 cup lime juice
1 tbsp oil
2 tbsp cilantro, chopped
1 clove garlic, grated
1 jalapeno, finely diced (optional)* salt and pepper to taste

Directions – (Using chicken cutlets)

1. Marinate the chicken in the mixture of the lime juice and zest, oil, cilantro, garlic, jalapeno, salt and pepper for 30 minutes to overnight; the longer the better (lime naturally tenderizes the meat.)
2.  Before grilling the chicken, pour off the marinade into a saucepan and add 3 Tbs olive oil.  Saute over medium heat for 10 minutes.  Set aside.
3. Grill chicken 3-5 minutes per side (make sure its thoroughly cooked.)
4.  Pour sauteed marinade over grilled chicken serve & enjoy!
*The way to make the jalapenos less hot is to remove the seeds and veins before dicing.

Ingredients
Handful of fresh mint
1 ounce light run
Juice of half a lime
Sparkling water or club soda
Simple Syrup
Extra mint leaves for garnish

Directions

Add 2-3 mint leaves in a tall glass. Add about a tsp of lime juice. Gently muddle the mint, and lime juice together until the mint begins to macerate. Next add 1-2 tbsp simple syrup (to taste) and the 1 oz rum. Add ice cubes and then top off with sparkling water or club soda. Garnish with a few more mint leaves and a lime slice.

To make simple syrup - In a small pot, combine ½ C sugar and ½ C water together. Cook over medium heat until all the sugar has dissolved. Set aside and let cool.

Strawberry Mojito (makes 4)

Ingredients
3 whole strawberries, hulled and cut into quarters
Handful of fresh mint
4 ounces light rum, divided
Juice of half a lime
Sparkling water or club soda
Simple Syrup
Extra mint leaves for garnish

Directions

Add 3 strawberry slices add 2-3 mint leaves in a tall glass. Add about a tsp of lime juice. Gently muddle the strawberries, mint, and lime juice together until the strawberries and mint begin to macerate. Next add 1-2 tbsp simple syrup (to taste) and the 1 oz rum. Add ice cubes and then top off with sparkling water or club soda. Garnish with a few more mint leaves and a lime slice.

 

 


 


St. Germain Mojito (flavored with Elderflowers) (makes 1)

Fresh mint leaves
1 ounce St-Germain liqueur
1 ounce light rum
1 tbsp honey
Club Soda
Lemon
Lime
Simple Syrup

Directions

In a tall glass muddle 5+ fresh mint leaves with honey. Combine and mix well: St-Germain, Rum, and juice of half a lemon and half a lime. Add ice and top off with club soda. Sweeten to taste with simple syrup! Garnish with limes. Salute!
